I never liked spinach until I made an adventurous decision to buy some at the grocery store anyways… and turn them into Oven Baked Spinach Chips.

Now, spinach is my new best veggie friend. It tastes sooo ridiculously good. Let’s start baking!

Ingredients
• Bucket load of spinach leafs. I am talking about handfuls here!
• A bit of extra virgin olive oil, to coat the leaves. You don’t need a lot - for 400 grams of spinach leaves, I used 1 tablespoon of oil.
• Herbs. I used pepper, curry powder, red pepper powder, garlic powder and thyme.

Directions
1. Preheat oven at 120°C / 250F,
2. Rinse and dry the spinach leafs,
3. Place spinach in a large bowl, pour in some olive oil to coat the leafs,
4. Add herbs, toss it all around,
5. Place some baking paper on a tray, and lay out the spinach nice and evenly,
6. Pop them in the oven for 15-20 minutes. Keep checking on them until they’re crisp!

I could eat buckets of this stuff. Yum! Enjoy your crispy veggies. :)

APPLES
“An apple a day keeps the doctor away”. We’ve all heard it, what does that mean exactly? Apples are fantastic for your heart as well as for keeping your bowel movements regular. And lets face it. If things are “moving” along smoothly, many diseases are far less likely to occur.

APRICOTS
These orangey little fruits are a health inducing powerhouse! Apricots help fight cancer, control blood pressure, slows the aging process and even fights against Alzheimer’s!

ARTICHOKES
While it can be tough to eat these without drenching them in butter or mayo, these fabulous green globes actually lower your cholesterol, aid your digestions and even fight liver disease.

AVOCADOS
Avocados are pretty tough not to love. Not only do they taste great in many different dishes, they also help fight diabetes and high cholesterol. Avocados can actually help stop a stroke dead in its tracks, and to top it all off, your skin will look better as well!

BANANAS
Bananas can “plug you up” when you’re sick or have “the runs”, they can sooth a nagging cough and help keep your blood pressure regulated. Pretty good for this yellow yummy!

BEANS
Beans provide a ton of fiber to your clean eating plan. As a result, you’ll find that things “move along” a little more smoothly. These lovely legumes help lower high cholesterol, fight cancer and even helps with shaky blood sugar.

BEETS
You either love em’ or hate em’. There’s very little in between. But if you love em’, you’ll have a great leg up on those that don’t. Beets help with blood pressure control, weight loss and even helps keep your bones in good condition!

BLUEBERRIES
These lovely little berries are a true nutritional powerhouse! They are credited with fighting cancer, strengthening memory and even helping your heart and blood sugar. You definitely want to include these goodies in your clean eating plan!

BROCCOLI

CABBAGE
For those of you who love your cabbage, you can boast about the extra health benefits you’re getting. Benefits such as help with weight loss, cancer prevention and heart health.

CANTALOUPE

CARROTS

CHILI PEPPERS

DARK CHOCOLATE

FIGS
I had a fig tree in my yard growing up and I never ate a single fig. Of course now, I could kick myself for it. Why? Because figs aid in weight loss, lower blood pressure and cholesterol and even fight cancer. Not bad for this old world fruit!

FISH
While we have to be increasingly careful about the fish we eat, it’s incredibly healthy if for you if you can find the good stuff. It protects your heart, fights cancer and strengthens your immune system.

FLAX
This little seed is a nutritional powerhouse. It helps your digestion, strengthens your immune system and helps with diabetes. The only thing better than flax is Chia seeds. But that doesn’t mean you should forgo flax. It’s far more readily available than Chia seeds and often more cost-effective for those on a budget.

GARLIC
Most folks these days know the benefits of eating garlic. But just in case you don’t, here’s the low-down. Garlic lowers cholesterol, helps with high blood pressure, fights cancer and even kills certain bacteria. And don’t forget the REAL benefit of garlic. It scares away the vampires! (Or anyone else who gets to close to you after you’ve eaten a lot of it! lol)

GRAPEFRUIT
These under-appreciated fruits help with weight loss, strengthen your heart and lower cholesterol.

GRAPES
This fruit is fabulously portable so there’s no excuse not to include them in your clean eating plan. They strengthen your eyes, help with circulation and even fight cancer and kidney stones.

GREEN TEA
1 cup a day is the general rule of thumb with green tea. It will help you fight cancer cells, lose weight and battle against strokes.

HONEY

WALNUTS
These nuts are great for lowering cholesterol, fighting cancer and improving your memory. (I need LOTS of walnuts!)

WATER
We all know we have to get our 8 glasses of water every day (although, we also now know that it can very according to your size and weight). But why is water so vital? Put aside the fact that your body is mostly water to begin with, and you’re left with the facts that water helps you lose weight, fight cancer, keeps your skin in great condition and helps you battle kidney stones.

WHEAT BRAN

YOGURT

Rose Water Infused Glitter Cake
Makes 1 9 inch cake

Ingredients:
cake:
2 cups all purpose flour
2 ½ teaspoons baking powder
¼ teaspoon salt
1 cup (2 sticks) good quality unsalted butter, softened
1 ¾ cups plus 1 tablespoon granulated sugar
4 eggs, at room temperature
1 ½ cups buttermilk
3 tablespoon rose water, divided (you can substitute this for an orange oil or any other
flavored oils of your choice)
approx. 1cup simple syrup
basic buttercream frosting:
1 cup (2 sticks) unsalted butter, softened
7 ½ cups powdered sugar, sifted
1/3 cup plus 1 tablespoon milk
1 ½ teaspoons vanilla extract
garnish:
1 cup fresh raspberries
lots of gold luster dust

Directions:
1. Preheat oven to 350°F.
2. Sift together flour, baking powder and salt. Set aside.
3. In a stand mixer or with a hand mixer, cream together the butter and sugar for about 3 minutes.
4. With the motor running add the eggs one at a time, scraping down the sides of the bowl after each addition.
5. Add the dry mixture and milk to the butter mixture, alternating in thirds, until all of the dry ingredients and milk have been incorporated. Stir in 1 tablespoon of rose water.
6. Divide the batter between two greased and parchment lined 9 inch cake pans and bake for about 25 minutes or until the cakes are golden brown and a toothpick comes out clean when inserted into the center of each round.
7. While the cakes bake, make the frosting: In a stand mixer fitted with a paddle attachment, whip the butter. With the motor running, add the powdered sugar, ½ cup at a time until all of the sugar has been incorporated. Add the milk and vanilla into the mixture and beat until smooth. Cover with plastic wrap and set aside.
8. Allow the cakes to cool completely, about 45 minutes. Remove cakes from the pans and place in the refrigerator for about an hour.
9. Once the cakes have chilled, slice each in half so there are a total of four cake layers.
10. In a small bowl stir the remaining rose water into the simple syrup.
11. To assemble: Place a single cake round onto a cake turner (or clean surface) and brush the top with some of the rose water syrup. Add a thin layer of frosting over the syrup and top with another layer of cake.
12. Repeat step 11 until all of the layers have been used. Coat the cake in a thin layer of frosting to create a crumb coat and allow the cake to chill for 30 minutes.
13. Decorate cake with the remaining frosting and begin to dust cake with gold luster dust. (I find the easiest way to completely coat the cake in luster dust is to dab some onto a pastry brush, pull the bristles back with my fingers and flick it towards the cake)
14. Roll raspberries in luster dust until well coated and arrange on top of the cake. Serve.

Green Smoothie - 1 cup baby spinach, 1 cup kale, 1 pear, 1 ½ cup of orange juice, and 1 frozen banana.

Chocolate Peanut Butter – 2 TBL unsweetened cocoa powder, 2 TBL peanut butter, ½ banana, 1 cup almond milk, ice. 320 calories total.

Mango Ginger — 2 cups frozen Mango, 1 cup frozen raspberries, 1 banana, ¼ cup chopped ginger, squeeze of lime, yogurt.

Good

Strawberry Date — 1 date, 1 ½ cup frozen strawberries, 1 cup almond milk. Optional: 1 scoop protein powder or 1 TBL of flaxseed oil.

Saag Paneer with Homemade Vegan Paneer Cheese

Saag Paneer with Home Made Vegan Paneer Cheese

  • 2 TBSP Vegan Ghee (recipe follows) or Sunflower Oil
  • 5 medium cloves garlic, finely chopped
  • 2 TBSP finely chopped Ginger
  • 1 cup Tomato Sauce
  • 1 TBSP ground Coriander
  • 1 tsp ground Cumin
  • 1 tsp Cayenne Pepper
  • 1 tsp Salt
  • 2 10 oz packages Frozen Chopped Spinach, thawed and un-drained
  • 1 batch of Home-Made Vegan Paneer (recipe follows, or sub cubed Super Firm Tofu fried as indicated in the Paneer recipe below).
  • 1/2 cup MimicCreme
  • 1 tsp Garam Masala Powder

Heat oil in 3-quart saucepan over medium-high heat. Add garlic and ginger root; stir-fry 1 to 2minutes or until garlic is golden brown.
